Start by rinsing and draining the lentils. Chop the onion, dice the carrots into small cubes, and grate or dice the tomatoes.

Heat some oil in a pot and sauté the chopped onion until translucent. Add the diced carrots and sauté for a few more minutes. Then, add the grated or diced tomatoes and cook for a couple of minutes.

Add the rinsed lentils to the sautéed vegetables and stir. Pour in enough water to cover the ingredients (about 4 cups). Season with salt and any other desired spices.

Cover the pot with a lid and simmer over medium heat for about 20-30 minutes until the lentils are soft. Then, blend the soup until smooth using a blender or a fork. Serve hot and optionally garnish with a squeeze of lemon juice or a dollop of butter. Enjoy your meal!
